Bihāg

Our newest washed coffee is amongst our most intriguing!

Sourced from Baarbara estate , Chikmagalur (one of the highest holdings in the area) ; this lot of washed coffee stumped us with its complexity and a very interesting pulpy mouthfeel.

For this lot, ripe cherries were picked, pulped(i.e. had their skin removed) and were fermented in a closed barrel for 42 hrs. The mucilage was then washed and the coffee was slow-dried on raised beds.

The resulting cup is very sweet, prominently fruity and has a very intriguing pulpy mouthfeel. The plum like acidity reminds our roaster of the rāga bihāg and we cannot recommend this coffee enough for those seeking fruitier brews but without the funkiness associated with naturals.

Bihāg the coffee is a dream across all manual brewing methods. The pulpiness also makes this coffee a stellar single estate espresso!
